Blueberry and Raspberry Sauce for Pancakes and Waffles

I LOVE living so close to a Costco.  I am able to buy huge containers of foodstuffs that will last me for months!  They also sometimes will have an amazing fruit selection like raspberries, blueberries, strawberries, apples, oranges, different kinds of pears, MANGOS.  Mmm.  Oh wretched, cursed mango.  Why is it that I am allergic to my most favorite fruit ever?  Why can't I be allergic to something icky like papaya. 

I digress.

The syrup is incredibly easy to make.  Seriously.  You take a cup of blueberries, a cup and a half of raspberries, a half cup of sugar, and a quarter cup of water and toss it all into a pan. 


Watch the sugar dissolve and the berries darken just a bit as the water starts to heat up.


Let it boil for 5 minutes.  Scrape the pan to make sure nothing is sticking and burning.


Reduce heat and simmer for 10 minutes, or until it's nice and thick and syrupy.


I also wanted fresh strawberries on my pancakes.


So while the berries are boiling, take some strawberries and slice those bad boys up. Mix with a bit of sugar and set it aside.


Lookit that!  All done!


Pour carefully into a serving dish if you're planning on putting all the food on the table before onto plates.


I layered the strawberries one half and then spread a huge spoonful of the berry sauce all over the other half of pancake.



Seriously delicious.

1 cup of blueberries [85 calories]
1.5 cups of raspberries [98 calories]
1/2 cup of white sugar [387 calories]
1/4 cup of water [0 calories]

Total Calories in Dish - 570  [it boiled down to approximately 1 1/2 cups of syrup]
3, 1/2 cup servings - 190 per serving
6, 1/4 cup servings - 95 per serving

Meaty Pesto Lasagna

I am not a huge fan of beef unless it is in its ground form.  I love chicken, will eat turkey, and won't even consider touching fish.  Mr. Boyfriend, however, will eat almost any meat in any form, except for the piggy.  We both grew up not eating it, and as a result, neither of us really have a desire to cook it.
